Smoothies are just awesome. They are always handy when in need of something healthy and filling, fast. I have a smoothie every single day. It’s my favorite way to make sure I get enough nutrition into my diet.
This blueberry spinach ginger smoothie is one of my all time favorites. I keep going back to it. It starts by being filled up with fresh spinach, blueberries (I use frozen), your favorite plant milk, fresh cut ginger, a banana, and chia seeds.
A note on using fresh ginger:
If you don’t cut it up finely, it will result it little strings of ginger in your smoothie. Blenders don’t typically catch all of the tiny little ginger fibers and so the result is that you’re left feeling like little strings of plastic are in your healthy smoothie. This happened to me once. I kept feeling little strings in my mouth. Upon inspection, I was convinced plastic had gotten into my smoothie, so (a little horrified) I threw out the entire smoothie before realizing it was just innocent ginger. Since then I always cut it up into tiny cubes so as to cut down on long fibrous ginger strings.

I added a touch of blue spirulina to make the color pop more in the photos (it also adds some great health benefits), but it is still awesome without that added!
For having so much green, this smoothie sure does mask it well. There isn’t a single hint of grassy, earthy taste that you typically get with green smoothies and juices.
The chia seeds add extra plant protein and amino acids. It also helps the smoothie to be thick and creamy.

Healthy and delicious blueberries, spinach, and ginger join forced to make a superbly GOOD for you pick me up perfect for on the go breakfast!
- 2 cups spinach, tightly packed
- 1/2 cup frozen blueberries
- 1 banana
- 1 cup oat milk*
- 1 inch piece of fresh ginger, cut into small bits
- 1 tsp chia seeds
- ice as desired (I add about 1/4 cup)
1/8 tsp blue spirulina powder
- Add all ingredients to blender and blend until smooth.
*you can use any plant milk here, but I have found that oat milk yields the most creamy results.
