I love recipes that taste rich and complex but are a breeze to make. This recipe is just that. It’s easy to make and has the simple, healthy ingredients that you may have on hand already.
The first step is to soak the cashews in some hot water for about 30 minutes. Make sure your water is hot, otherwise it may take a little longer for the cashews to soften up. If you want to prepare the cashews ahead of time, you can soak them in cold water for 8 hours and then proceed with the recipe.
The cashews, once softened, go into your blender along with the lemon, nutritional yeast, and water. I usually use about two to two and a half cups.
If your sauce looks too thin, don’t worry. This cashew sauce thickens up really well when its heated. In fact, you can purposely make it a very thin sauce and save it in mason jars to use whenever you need a quick dairy free cream based sauce.
Boil a pot of water for the pasta noodles. Make sure the water is well salted and oiled with olive oil for a better tasting pasta. Cook until al dente for best results.
Once you have the sauce blended, heat a large pan to medium/high and add olive oil, garlic and onion and sauté until fragrant. Next, add in sliced mushrooms and cook until some of their water is released.
Now, add in the cashew sauce and simmer until thickened to your liking.
Add the pasta noodles to the pan and mix well to coat evenly. Enjoy while hot! Top bowls with chopped parsley for freshness and crunch. I like to add a little squeeze of lemon on top too, just because I looooove lemon.
Top off your pasta with some fresh chopped Italian parsley for a lovely fresh flavor that compliments the pasta really well.
